Canned coconut milk is high in good fat and it contains nearly 10% of needed vitamins such as zinc, potassium, magnesium, and iron. Rolled oats require the longest cooking time and are best for “morning porridge” or use in baking. Steel cut oats take longer to cook and tend to have a chewy texture, but will hold their shape after cooking and could even be shaped into bars and stored.
